Join Darcy Williamson in her outdoor canning kitchen to learn water bath and pressure canning, pickling, jamming, and honey extraction. We’ll use harvests from the Haven’s organic garden and the forest. Take part in late summer backyard beekeeping, which includes working the hives and filtering and extracting the honey. Participants will go home with canning skills, recipes, an assortment of filled jars and the basics of backyard beekeeping.
EACH GUEST NEEDS TO BRING: 8 quart jars, 12 pint jars, and 12 jelly jars for canning and preserving. If you are traveling and prefer to purchase your jars locally, we will do that for you and have them available at the Haven.
August 1
11:00 A.M. Arrival. ~ You will be taken to your assigned quarters to get settled in before lunch. Lunch
will be at noon, so that we will be well nourished before we head off into the garden to harvest late
summer produce for canning. The next few hours will be spent processing and canning our harvest.
5:00 P.M. ~ We will return to the garden to gather fresh produce for our evening meal. While guests
relax, the meal will be prepared for you.
Dinner will be around 6:30 P.M. Elk or Buffalo burgers will be grilled on the barbeque to supplement our garden fresh meal.
8:00 – bedtime. ~ Perhaps you will want to take a dip in the river? There are large towels located in
your sleeping quarters for that pleasure. If you would prefer a sauna, let one of the apprentices know
and it will be started for you. There will also be time to relax and visit around the fire pit. Or perhaps
one would prefer a fast game of pickleball on our regulation‐size court?
August 2
7:00 A.M. Coffee and fruit in the canning kitchen for those who rise early.
8:00 A.M. – 9:30 A.M. While the morning is cool we will suit up for a visit to the beehives. Frames of honey will be brought back to the outdoor canning kitchen for extraction.
10:00 A.M. – 10:45 Breakfast at Mavens’ Haven kitchen.
11:00 AM. ~ We head for the garden and orchard to gather produce and fruit for our workshop in the
outdoor canning kitchen.
11:30 A.M. ~ After the honey is extracted and bottled, guests will learn how to can, pickle and make
jams using the wood stove in Mavens’ Haven outdoor canning kitchen.
12:30 – 1:00 P.M. ~ Lunch break! A sandwich buffet will have been set out for us in the Main Maven
Havens’ kitchen. This will also be a great time to sample some of the foods we harvested and processed
yesterday. There may also be time for you to stroll down to the Trading Post to have a look around.
5:00 P.M. ~ We will return to the garden to gather fresh produce for our evening meal. While guests
relax, the meal will be prepared for you.
Dinner will be around 6:30 P.M. It is time to enjoy our meal over wine or herbal beer and
conversation. I am certain we will have much to talk about. Wild Salmon will have been grilled on the
barbeque to supplement our garden fresh meal.

Havens’ kitchen. This will also be a great time to sample some of jams and pickles we created.
3:00 P.M. ~ We will finish our day’s work and say our farewells.
There is availability for 8 guests. Cost for the event is $275 per person
and includes all meals plus “off the grid”, but comfortable lodging.
